Creamy Broccoli Salad

* Serves 3-5
* 25-30 minutes to prepare; plus 1½ to 2 hours to chill


1 to 1.5 lbs of fresh broccoli
1 large lemon, well-juiced
¼ cup of mayonnaise
¼ cup yogurt or sour cream (or a combination)
approximately ½ tsp. salt
½ tsp. crushed tarragon
4-6 stalks of green onions, minced
lots of freshly-ground black pepper
garlic whistles, chopped, for garnish

1) Cut off the bottom few inches of the broccoli stalks and discard. Use a sharp paring knife or a vegetable peeler to trim the stalks, and to lightly shave off some of the tough outer skin. Cut these well-manicured stalks lengthwise into manageable-sized spears.
2) Steam the broccoli until it is just tender and bright green. Remove from the heat immediately, and rise under cold water. Drain.
3) Combine the lemon juice with all the other ingredients. Toss the still-warm broccoli with this dressing until well-mixed. Cover, and chill.

Variation: Add crumbled bacon, raw sunflower seeds, raisins, and chopped red onion.
