Grandma Dodes Icebox Cukes

These are the pickles my Grandma Dode made for her family of ten, with cucumbers fresh off the vine from my Grandpa Don’s huge garden.

 

4 cups cucumbers, sliced about ¼ inch thick

2 white onions sliced and separated into rings.

1 green pepper, sliced

1 cup sugar

1 cup white or raw apple cider vinegar

1 teaspoon celery seed

1 tablespoon sea salt and a little black pepper

 

Combine all the ingredients in a large glass crock or jar, covering with filtered water and chill in the fridge before enjoying.  Keeps indefinitely (or a long time) in the refrigerator
