Green Onion Sweet Corn Fritters

Makes 12-14 fritters


140g (1 cup) flour, all purpose or an “all purpose” gluten-free flour blend (I like Pamela’s Artisan Blend)

2 large eggs, separated

2 tablespoons melted butter or olive oil

1 cup milk, 2% or whole

2 cups sweet corn kernels, fresh or frozen

4 tablespoons finely chopped green onion

1 teaspoon sea salt

olive oil, coconut oil, or ghee (clarified butter) for frying


Stir flour and salt in bowl, adding in egg yolks, milk, melted butter or olive oil.  Allow mixture to rest in the fridge for 30-60 minutes.  Gently stir in corn kernels and green onion. Beat egg whites until soft peaks form, carefully folding into the batter.


Pour ¼ inch oil in a hot cast iron skillet, allow to heat to approximately 350 degrees.

Place large spoonfuls of batter onto the oil, frying once on each side until golden brown.  Remove and drain fritters on a paper towel or bag.  Serve immediately.
