Quinoa and Cucumber Salad

Quinoa and Cucumber Salad

Salad:

2 large cucumbers, halved and sliced

2 cups quinoa (cooked in 4 cups water)

1 sweet onion, thinly sliced

½ cup currants

1 bunch kale, stemmed and finely chopped

1 cup toasted cashews or pecans

1 bunch parsley, stemmed and finely chopped

 

Dressing:

¼ cup toasted sesame oil

¼ cup canola oil

½ cup rice vinegar

2 tablespoons honey

2 tablespoons mustard

2 tablespoons tamari

¼ cup orange or apple juice

1 teaspoon salt

 

Combine the salad ingredients in a large bowl.  In a small bowl, whisk together the dressing ingredients until well mixed.  Pour the dressing over the salad.  Mix well and refrigerate until very cold.
