Super Simple Pesto

Makes about 1 cup

¾ cup extra-virgin olive oil
1 clove garlic OR 3 to 5 garlic scapes
1 tablespoon pine nuts or walnut pieces
¼ teaspoon salt
1/3 cup freshly grated Parmesan cheese
4 cups fresh basil leaves

Place all of the ingredients except the basil in a blender or food processor. Blend
until smooth, then add the basil, a handful at a time, blending until all of the basil is incorportated.

• Substitute cilantro for basil and add a little lemon or lime juice
• Substitute tarragon for basil
• Substitute 1 cup of rosemary and 2 cups of parsley for basil
• Substitute mint for basil

Suggestions for use:
• Mix with cold or hot pasta, rice, or other grains
• Use as a sauce for fish, chicken, or pork
• Top a baked potato, fill an omelet, or spread on a sandwich
• Use to flavor a pizza or tomato sauce, dressings, yogurt, etc.
